Meet the Decorator...Tami Utley

When Tami Utley’s first child was born she wanted to make beautiful birthday cakes for him, like her mother did for her. After taking her first cake decorating course in 1990 she immediately became obsessed with gumpaste and started learning all she could about foreign technique. She started competing in 1991, and has won several Best of Show awards and numerous Best of Division and First Place awards. After a few years she started teaching and demonstrating.

Tami loves to learn all she can and has had classes with Nicholas Lodge, Geraldine Randlesome, Carole Faxon, Debbie Brown, Jan Svenson, Eunice Borchers, Lynne Rigby, Maureen Stevenson, Steve Stellingwerf, Roland and Marsha Winbeckler, and Betty Newman-May, plus many others. She has worked as an assistant for Nicholas Lodge and Colette Peters in their classes. And she has been featured in American Cake Decorating Magazine several times and had her cakes in the ICES newletters.

Although she specializes in foreign technique cake decorating including Lambeth, gumpaste flowers, flood work, brushed embroidery, and bas relief, Tami thoroughly enjoys all facets of sugar art!

Fast and Easy Fireworks Cake July 4, 2010

Tammy does a great job with this fast and easy 4th of July cake.  I like that you don't really need a lot of special tools to make this cake.  Simple yet fun. I added edible glitter to the white stars to add a little extra sparkle.  Instead of stars on the cake I had some simple decorations poking out.

I just made the firecrackers using Tami's techniques and had so much fun making them.  I will be using them on a couple of July 4th Birthday cakes.  Sometime after the 4th I was asked to do a cake for Jake's Fireworks here in town.  I will be making fireworks to go one their cake also.  It is going to be a cake thanking everyone for their hard work to make this year a huge success.

Easy, cute cake June 30, 2009

This cake could be changed to a birthday cake with candles instead of the firecrackers on top.  I really enjoyed learning how to melt the chocolate inside the disposable dowels, but I didn't understand why Tami didn't just melt colored chocolate and then not have to cover them with fondant; that seemed like a waste to me.

The firecrackers were so much fun to make, that I even made a sky rocket to go along with the firecrackers. I did have one small problem with freezing the candy. It took a little longer than 5 minutes in my freezer. I had to leave it in for about 8 minutes. Just like with microwaves all freezer are set to different temperatures.
